Eat Smart in Parks was launched in 2011 to help parks offer healthier options in their concession operations. The project has conducted customer research and provided technical assistance and marketing support to local Missouri parks wanting to increase their healthy options, all while managing barriers such as cost, procurement and food waste. This session will discuss the results of project implementation in both rural and urban settings and how it can be replicated in other states.

Participants will be able to list the benefits of offering healthy options in their concession operations.
Participants will be able to apply the 4'Ps of marketing to their concession operation promotions.
Participants will be able to implement the Eat Smart in Parks guidelines in selecting healthy food and beverage options for their parks.
